The Incredible, Edible, Egg.

I want you to think of breakfast. Go ahead...just imagine the best breakfast you have ever had in your life. Is it an omelet? A big stack of pancakes with a side of eggs over easy? Is it eggs benedict or a breakfast burrito or scrambled eggs? Chances are, the incredible, edible egg is featured somewhere in there! Man, I love eggs. Let me tell you why. Are you on a diet? Eggs fit the bill. Trying to fit in more protein each day? Eggs. Want to make any dessert ever? You need eggs! They're beloved by most, and while they may have some negative associations (cholesterol-debunked), they're pretty incredible. Let's "crack" one open.

Nutritional Content of 1 large egg:

Calories: 75

Fat: 5g (2.7g mono/polyunsaturated)

Carbs: .6g

Protein: 6g

What are the nutritional benefits?

Well, for starters, eggs are LOADED with vitamins and minerals. They include Vitamins A, B6, B12, D and Potassium, but also minerals like Calcium, Magnesium and Iron. Now, that's a full plate of micronutrients. They also have a ton of antioxidants to boot, like Lutein and Zeaxanthin, which are essential for eye health and detoxing the body (eliminating free radicals). Eggs contain Omega 3, and with our society's high consumption of Omega 6 fatty acids, we need Omega 3 to maintain a healthy ratio to lower blood pressure and total cholesterol as well as sharpen nerve function. I could never forget the PROTEIN. Protein intake aids in fat loss, muscle recovery, nerve and lymphatic health, and overall cellular function. The 9 essential amino acids found in eggs also make them a "complete protein" and one of the fastest absorbing sources of it available.

Not bad eh? Now, on to the best part. EATING the eggs.

There are seriously endless options when it comes to preparing your eggs. Throw them in with almost any other source of lean protein or carbohydrate and it will "super charge" your nutritional profile. You can scramble them, poach them, fry them, mix them, hard boil them, or even drink them raw (if your into that, I guess)!

Here's a breakfast recipe that leaves me egg-static. Give it a try!

Stuffed Bell Pepper Eggs (this is a 1 person recipe...to make more, just multiply the recipe!)

  • 1-2 eggs and 2 egg whites

  • 1/4 of a chopped white onion

  • 1 cup spinach, chopped

  • 1-2 tbsp. salsa of choice

  • 1 medium sized bell pepper, seeded and halved

Directions:

  1. Sauté the onion and spinach in 1/2 tsp olive oil.

  2. Season with salsa after onion and spinach are sauteed.

  3. Distribute mixture evenly into pepper halves.

  4. Add 2 tbsp egg whites.

  5. Bake in oven at 375 for approx 30 min or until eggs are set.
